Do you ever worry how many vitamins and nutrients your little ones are getting?? I do constantly - especially the smallest one as I’ve learnt that she needs almost 7 times more vitamin D per kg of body weight than us bigger kids!!

I am so so happy to say that lock down has seriously improved my cooking ability and the options I'm putting on the table, and it wouldn't be without the help of my amazing contributors to my "feed the family" series. Im still not super organised at taking the right meat out the freezer of having the ingredients in, but once i've sorted that then I'm flying.

Lemon & Rosemary Roast Chicken Traybake, with potatoes & shallots from the amazing and lovely @simplyfoodbymandy
I know so many of you have already tried this super easy and totally delicious Traybake. It really is the answer if you want a lovely family meal without any of the faff! The juice at the bottom of the pan will infuse the potatoes beautifully, with enough to spoon over each plate as a delicious and flavoursome gravy.
